David Wondrich answers the question around “what is a rum” and, from the past, we have learned (or more specifically David has learned and shared) that the true definition of rum isn’t being created anymore… why? We can’t.

Due to how sugar is now refined and processed in plants and off Islands, there is no capabilities today to create the rum of the past, but we can sometimes get close approximations through blending techniques like those done at Plantation Rum.
