On Monday I mentioned that last weekend, Debbie and I went for our first camping trip of the season.  We had so much fun and we couldn’t have asked for better weather.  Maybe just a few less mosquito bites!  Grrrrrrrr!

When your camping, the best meals are ones that you don’t have to spend too much time making.  For lunch on Saturday, we made pulled pork sandwiches and they were the perfect meal for camping so we thought we would share them with you.  In case you’re like us and you do a lot of camping and need some easy and satisfying recipes for these occasions.

These are sooooooo easy because Debbie made the pulled pork ahead of time.  So all we had to do was put the sandwiches together.  The hungry boys though that they tasted amazing.  There was more than one Mmmmmmm heard as we ate.  And they really were good.  Slightly spicy and tangy, tender pulled pork, sweet caramelized onions, melted cheddar and crunchy dill pickles.  Totally delish!

Debbie and I are both not huge fans of bbq sauce so we just like a little bit smushed up with the mayonnaise on the bun, but if you really like it, you could add more on your bun or even add some to the crock pot when your cooking the pork.  Likewise, if you like things a little more spicy, add more hot sauce when you are cooking the pork or add some to your bun.  When I make these next for my family, I will add a little more heat.  Each to their own right?

We used the bbq to heat up our sandwiches and get the cheese all warm and melted.  You can eat these sandwiches cold too, but warm is a ton better!  We wrapped these in tin foil and heated them over indirect heat on the bbq, but you could use your trailer oven if you have one, or broil them open faced in your oven at home.  I love how the melted cheese gets kind of crusty and crunchy around the edges!

  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp salt
  • ½ tsp pepper
  • ½ tsp cayenne pepper
  • 1 tsp chili powder
  • 1 tsp cumin


  • 2 lbs pork butt roast
  • 1 can beer (any kind)
  • ½ cup apple cider vinegar
  • ½ onion, sliced
  • 1 whole garlic bulb, peeled and smashed
  • 3 tbsp franks hot sauce


  • 1 tbsp olive oil or butter
  • 1 large onion, sliced
  • 1 tsp salt


  • your favorite sandwich buns
  • ½ cup pulled pork
  • 1 – 2 tbsp mayo
  • 1 tbsp bbq sauce (your favorite kind)
  • 1 slice aged cheddar or whatever cheese you like
  • few slices of pickles
  • 3 – 4 tbsp caramelized onions

  1. First, give your pork roast a good rinse and pat dry.
  2. Mix the rub ingredients together in a small bowl. Then rub the pork roast all over with it until the pork gets all the rub soaked in.
  3. Next, place the roast and all the crockpot ingredients into the crockpot. Cover with the lid and cook for 5 hours on low.
  4. When the 5 hours is up and the pork is nice and tender, take the roast out, shred it with two forks, and get rid of the fat.
  5. Drain the fat from the juices left in the crockpot, leave 2 cups of the juice in the crock pot and discard the rest. Add the shredded pork back to the crockpot and cook for another 2 hours on low. When its done, remove it from the crockpot and set it aside till your ready to assemble the sandwiches.
  6. Meanwhile, make your caramelized onions. Heat a pan on medium-low heat, add the oil or butter, your sliced onions and sprinkle with the salt. Cook for 8 – 10 mins or until the onions get nice and browned and sweet. Stir every couple mins. Be careful not to burn them. Set them aside to cool.


  7. Heat your bbq on medium heat on one side and no heat on the other. Keep the lid closed.
  8. Spread the mayo and bbq sauce on each side of your bun, add the shredded pork, caramelized onions, cheese and pickles.
  9. Wrap each sandwich with tin foil and throw in the bbq on indirect heat for about 5 mins till the cheese gets all nice and melted.
  10. Serve!

Our puppies sure loved stopping once in a while so they could explore the woods and find mud.  They look like they are both smiling 🙂
