Hot days call for cooling drinks. Sip on this Cantaloupe Tequila Spritzer all summer long.
I have apologies to offer up. I totally skipped out on Friday Happy Hour last week but I have a legitimate excuse, I promise. While everyone was out and about enjoying their Memorial Day off last Monday, I came down with a late spring cold. Sniffling, sneezing, fever, chills, sore throat. You name it, I had it. Fun times you guys and it took me down for practically the week. I managed to get a few hours of work done each day before meandering off to bed with the pug for a 2 to 3 hour nap.
The guy enjoyed the extra snuggle time, I did not enjoy the reason to give it to him. This of course came on after dealing with a never ending allergy cough that finally sent me to the doctor to get the good cough medicine. You know things are bad when you wake up and it hurts to breathe. Telling people you have chest pain but not “emergency room” chest pain is always a thrill.
The good news, I’m healthy – well except for the last bit of allergies that won’t disappear but I’m healthy again.
The bad news, I realized perhaps taking on cocktails every week is beyond what my schedule can allow. Womp womp.
Friday happy hour is not disappearing, it’s now a bi-weekly event. A little something to look forward too. Plus I only have so much to say each week. My life is not that exciting, I promise you that. Do you really want me to start talking about the weather again? I could but I don’t think you want me to, nor is the pugs daily escapades of sleeping, snoring, begging for berries and being cute that exciting to read about.
Cute to look at yes but thrilling reads? No.
And now it’s time to drink. This little spritzer is the perfect cooling cocktail for hot days. I don’t know what it is about melon but it has that cooling off factor when I bite into a piece. Since spritzers say easy, cool and refreshing to me cantaloupe was a natural fit.
- 4 ounces cantaloupe puree
- 1 lime, juiced
- ½ ounce simple syrup
- 2 ounces reposado tequila
- club soda
- cantaloupe and thyme sprigs for garnish
- Place the cantaloupe puree, lime juice, simple syrup and tequila in a cocktail shaker.
- Fill a collins glass with ice and pour the cocktail over.
- Top with club soda, then garnish with a thyme sprig and cantaloupe before serving.
- Makes 1 cocktail
